Oven Roasted Salmon with Fresh Tomato Relish
A quick new way to roast salmon in the oven. Plain or topped with a relish of cherry tomatoes and red wine vinaigrette.
This dish is delivered fresh.
Adjust oven rack to lowest position, place rimmed baking sheet on rack and heat oven to 500 degrees. Place salmon skin-side down on baking sheet. Carefully transfer baking sheet to the hot oven. Immediately, turn the oven temperature to 275 degrees. Bake salmon until it is the desired doneness, about 11 minutes. Top with relish and serve.
