Enchiladas Verdes con Pollo
Enchiladas, stuffed with chicken and Monterey Jack cheese, are heated in a roasted poblano green sauce and garnished with a Romaine salad with radishes and olives. Beautiful and delicious!

Pour enchilada sauce over the enchiladas in their container. Heat the container in the microwave until the enchiladas are heated through, 1 to 2 minutes. While enchiladas are heating, toss the salad with the salad dressing. When enchiladas are heated, garnish with the dressed salad and serve immediately.
