Grilled Cheese Sandwiches with Garlicky Mushrooms
These fontina-cheese sandwiches made with mixed-grain country bread include cremini mushrooms that have been sautéed in a little butter with garlic and sage.

Heat a small skillet over medium heat. When the skillet is heated, add the sandwich with the buttered sides out and reduce the heat to medium-low. Cook, pressing the top of the sandwich often with a spatula, until the bottom is browned nicely and crisp, 5 to 7 minutes. Flip the sandwich and cook pressing down on the sandwich from time to time until the second side is golden brown and crisp, 5 to 7 minutes. Transfer sandwich to a cutting board, cut it in half and serve immediately.
